Pumpkin Chia Seed Pudding

It’s the pumpkin  fall season. I heart ALL things pumpkin. I could turn orange at any moment from all the pumpkin I love to eat. 😀 So…. a healthy snack sitting in the fridge waiting for me that screams pumpkin fall? Count me in and let’s save an entire shelf in the fridge for it.

1/8 cup chia seeds
1/2 cup almond or skim milk
1/8 cup canned pumpkin
1/2 tablespoon agave syrup
1/2 teaspoon cinnamon
Pinch nutmeg

Directions

Combine all ingredients in a bowl. Cover and refrigerate for at least 3 hours, or overnight.
